Hippocrates said that food is medicine, and medicine is food. We add that for food to be medicine, it should be made from organic products and be delicious.
You can experience this for yourself by coming to us for a weekend, a spa stay, or simply for relaxation.
At Lawendowy Zdroj, we place great emphasis on the quality of the food we serve:
- We use organic, natural, and regional products.
- We cook fresh meals daily, full of nutritional value, incorporating plenty of local but forgotten vegetables such as sunchoke, parsnip, kale, and scorzonera, as well as those from distant lands like sweet potatoes, daikon, and our beloved fennel (prepared in various ways).
- Grains also reign in our kitchen; we particularly enjoy millet and buckwheat.
- Beans have replaced sausage (we have regional Korczyn bean); every day for breakfast and dinner, we serve a different paste made from legumes.
- We personally season, marinate, and prepare meats (turkeys, ducks, geese, guinea fowl, lamb, beef, and pork).
- We bake sourdough bread from whole-grain flour and gluten-free buckwheat.
- In our kitchen, we create dishes free from chemical additives, enhancers, fillers, and artificial aromas.
- We season our dishes with a wide range of herbs, both well-known and forgotten, such as chervil.
- We also use exotic spices like turmeric, ginger, wonderfully aromatic cardamom, cinnamon, and anise.
- We follow seasonality, changing our dishes according to the passing seasons.
- We pay great attention to cooking methods: we bake, blanch, stew, and boil using high-quality pots and pans (without Teflon, and of course, we do not have a microwave!). Our heat source is gas, so our dishes are full of energy.
- We serve guests juices made with a slow juicer.
Our Team
Our team consists of culinary professionals who are conscious, cooking with great care and love for the craft. We value taste, health, and presentation on the plate. Our chefs work under the guidance of Joanna Szczepaniak, a Łódź native, who is a historian by education and a restaurateur by life. She advocates a holistic approach to health, preventive medicine, TMCH, and AYURVEDA. A long-time yoga practitioner, she places great emphasis on a healthy lifestyle, seasonal eating, and cooking only with wholesome, single-ingredient products.
The kitchen staff is assisted by wonderfully smiling, helpful, and always professional waitresses.
Breakfast: 8:00 AM - 10:00 AM
Lunch: 1:00 PM - 2:30 PM
Dinner: 6:00 PM - 7:00 PM
A la carte dishes are served from 1:00 PM.
Orders are accepted from Sunday to Thursday until 8:00 PM, and on Fridays and Saturdays until 9:00 PM.
Diet Therapy
Diet therapy is a natural method that involves applying a specific diet to restore the body's acid-base balance, reduce body fat, eliminate deposits, and decrease or eliminate disease symptoms. A proper diet influences weight regulation, skin firmness, appearance, well-being, and mental health.
Our Health Diet is based on:
- Acid-base balance
- High fiber content in dishes
- High nutritional density of products (according to Dr. Joel Fuhrman’s diet).
The percentage breakdown of products we use to prepare our dishes is:
- 40-50% - GRAINS - whole carbohydrates rich in fiber, protein, vitamins, and minerals
- 30-40% - VEGETABLES - they are alkaline-forming, leading to the restoration of acid-base balance
- 5-10% - BEANS AND PEAS - they are a source of valuable protein, cholesterol-free, and high in fiber
- 10-15% - EGGS, DAIRY, FISH, MEAT - they are a source of highly nutritious protein
- NUTS AND SEEDS - an addition to dishes and salads - a natural source of concentrated nutrients
- FRUITS - they are alkaline-forming, high in fiber, and sweet
- FATS from high-quality oils and clarified butter - providing essential unsaturated fatty acids (omega-3, omega-6) and vitamins A, D, E, and K
- HERBS AND SPICES - the best antioxidants, anti-inflammatory and anti-cancer properties, improve gut function, warm the body, and help eliminate moisture and mucus
- SWEETS - honey from a nearby apiary, agave syrup, xylitol, cane sugar
